Ingredients

Scale

For the Chicken Souvlaki

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized cubes
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

For the Greek Salad

  • 1 cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • ½ cup Kalamata olives
  • ½ cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice

Instructions

  1. Prepare the Marinade and Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until fully combined. Toss the bite-sized chicken pieces thoroughly in the marinade. Let them sit for at least 15 minutes to soak up the flavors.
  2. Skewer the Chicken: Thread the marinated chicken cubes evenly onto metal or pre-soaked wooden skewers to ensure even cooking and easy serving.
  3. Cook the Chicken in the Air Fryer: Preheat the air fryer to 400°F (200°C). Place the skewers in the basket without crowding. Cook for 12-15 minutes, turning halfway through, until chicken is golden brown and reaches an internal temperature of 165°F (74°C).
  4. Prepare the Greek Salad: While the chicken cooks, combine chopped cucumber, cherry tomatoes, thinly sliced red onion, Kalamata olives, crumbled feta, and fresh parsley in a large bowl. Drizzle with olive oil and lemon juice, then toss gently to coat.
  5. Serve and Enjoy: Remove chicken skewers from the air fryer and plate alongside a generous scoop of Greek salad. Optionally, serve with warm pita bread or a dollop of tzatziki for an authentic touch.

Notes

  • Marinate the chicken longer (30 minutes or overnight) for enhanced flavor and tenderness.
  • Do not overcrowd the air fryer to allow proper air circulation and crispy edges.
  • Pat dry the chicken before skewering to promote better browning instead of steaming.
  • Use fresh herbs like parsley and oregano to brighten the flavors.
  • Adjust lemon juice quantity to your taste for extra zing.
