Ingredients

Scale

Base

  • 12 oz fresh or refrigerated cheese tortellini
  • 2 tbsp extra virgin olive oil

Cured Meats

  • 4 oz slices of salami, pepperoni, or prosciutto, cut into bite-sized pieces

Cheese and Dairy

  • 12 marinated mozzarella balls

Vegetables and Herbs

  • 12 cherry tomatoes, rinsed
  • 12 olives (black or green), drained
  • 6 oz roasted red peppers, drained and sliced
  • 12 fresh basil leaves

Optional

  • Balsamic glaze, for drizzling

Instructions

  1. Cook the Tortellini: Boil the cheese tortellini according to package instructions until al dente. Drain well and toss with extra virgin olive oil to prevent sticking and enhance flavor.
  2. Prepare the Ingredients: Slice cured meats into bite-sized pieces. Rinse cherry tomatoes and fresh basil leaves. Drain olives and roasted red peppers, making sure all are ready to be skewered.
  3. Assemble the Skewers: Using wooden or metal skewers, layer ingredients alternately—start with tortellini, followed by cured meat, a mozzarella ball, cherry tomato, olive, roasted red pepper, and fresh basil leaf. Repeat this pattern until the skewer is full, leaving space at both ends for easy handling.
  4. Add Finishing Touches: Arrange the assembled skewers on a serving platter. Drizzle with extra virgin olive oil and, if desired, a light balsamic glaze for a tangy finish.

Notes

  • Cook tortellini just right to maintain a pleasant chewiness.
  • Soak wooden skewers in water for 30 minutes if grilling or broiling to prevent burning.
  • Balance salty, sweet, tangy, and fresh flavors on each skewer for the best taste experience.
  • Chill the skewers in the refrigerator for 15 minutes before serving to meld flavors.
  • Use fresh basil leaves to brighten the dish; avoid dried herbs.
  • Store leftovers in an airtight container refrigerated up to 2 days, covered to maintain freshness.
  • Avoid freezing assembled skewers; freeze cooked tortellini separately instead.
  • Reheat leftover tortellini gently with olive oil; avoid reheating whole skewers.
