  • Salt and pepper to taste

Instructions

  1. Prepare the Filling: Cook the bacon in a skillet over medium heat until crisp. Remove and drain on paper towels, then chop finely. In the same skillet, sauté diced jalapenos until softened. In a mixing bowl, combine the cooked bacon, sautéed jalapenos, cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Stir everything until evenly mixed and creamy.
  2. Assemble the Eggrolls: Lay out an eggroll wrapper with one corner pointing towards you like a diamond. Spoon about 2 tablespoons of filling near the corner closest to you. Fold the corner over the filling, then fold in the sides and roll tightly towards the opposite corner. Seal the edge with a little water to keep the eggroll closed.
  3. Fry Until Golden: Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C). Carefully add the eggrolls in batches, avoiding overcrowding, and fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  4. Serve Warm: Allow the Bacon jalapeno popper eggrolls to cool just slightly before serving so the cheese filling sets a bit but remains melty and delicious.
