Ingredients

Scale

Chicken and Seasonings

  • 1 lb chicken breast or thighs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • Salt to taste

Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 12 tsp sriracha (adjust to taste)

Sliders and Toppings

  • 8 slider buns, soft and slightly sweet
  • 2 cups shredded cabbage
  • 1 tbsp fresh lime juice
  • Pinch of salt (for slaw)

Optional Garnishes

  • Fresh cilantro (optional)
  • Thinly sliced green onions (optional)
  • Sesame seeds (optional)

Instructions

  1. Prepare the Chicken: Season the chicken breasts or thighs with garlic powder, paprika, black pepper, and salt. Cook by baking at 400°F for 20-25 minutes, pan-frying over medium heat until cooked through, or grilling until juicy and fully cooked. Let rest for a few minutes, then slice or shred the chicken for assembling.
  2. Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, and sriracha until smooth. Taste and adjust the spiciness as desired. This sauce is the key flavor component of the sliders.
  3. Prepare the Slaw: Combine shredded cabbage with lime juice and a pinch of salt. Toss well to create a fresh, crunchy slaw that balances the richness of the sauce and chicken.
  4. Assemble the Sliders: Lightly toast the slider buns. Spread a generous amount of bang bang sauce on both the top and bottom halves. Add a layer of the cooked chicken, then top with cabbage slaw. Place the top bun on and warm sliders are ready to serve.

Notes

  • Use freshly made bang bang sauce for best flavor and freshness.
  • Monitor chicken cooking time carefully to keep it juicy and tender.
  • Toasting buns prevents sogginess and adds desirable texture.
  • Balance creamy sauce with crunchy slaw for ideal mouthfeel.
  • Adjust the sriracha amount to customize the spice level to your taste.
