Instructions

  1. Prepare the Cookie Dough: Cream softened butter and granulated sugar together until light and fluffy. Add eggs and vanilla extract, then gradually incorporate all-purpose flour. Mix just until combined to keep the dough tender.
  2. Bake the Cookies: Drop small spoonfuls of dough onto a parchment-lined baking sheet, flatten slightly with fingers or spoon, and bake in a preheated oven at 350°F (175°C) for 10-12 minutes until edges are golden but centers remain soft.
  3. Make the Cream Filling: While cookies cool, whisk powdered sugar, cornstarch, egg yolks, milk, and vanilla over medium heat, stirring constantly until thickened into a smooth custard. Remove from heat and cool to room temperature.
  4. Assemble the Cookies: Once cooled, sandwich a generous spoonful of filling between two cookies, pressing gently to spread evenly without spilling.
  5. Prepare the Chocolate Glaze: Melt chocolate with heavy cream over a double boiler or microwave in short bursts, stirring until smooth and glossy.
  6. Glaze the Cookies: Dip or spoon chocolate glaze onto the tops of the assembled cookie sandwiches, then place on parchment to set until the glaze hardens slightly.
