Instructions

  1. Prepare the Broccolini: Trim the tough ends of the broccolini and blanch them in boiling salted water for 2-3 minutes until bright green and slightly tender but still crisp. Drain and set aside.
  2. Make the Cheese Sauce: In a saucepan over medium heat, melt the butter. Whisk in the flour to form a roux. Slowly add the milk in small increments, whisking continuously to prevent lumps. Cook the mixture until thickened, then stir in the sharp cheddar, Parmesan cheese, minced garlic, salt, and pepper until the cheese melts into a smooth, silky sauce.
  3. Assemble the Dish: Place the blanched broccolini evenly into a buttered baking dish. Pour the cheese sauce over the broccolini, making sure all stems are well coated.
  4. Add Breadcrumb Topping and Bake: If using, mix breadcrumbs with a bit of Parmesan and sprinkle evenly over the top. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until the sauce bubbles and the top turns golden brown.
