Instructions

  1. Prepare the Ingredients: Dice the russet potatoes into bite-sized pieces. Slice the andouille sausage and chop the celery, onion, and bell peppers. Mince the garlic cloves to ensure even flavor release during cooking.
  2. Sauté the Sausage and Vegetables: In a large pot, melt the butter over medium heat. Add the sausage slices and sauté until browned. Remove sausage and set aside. Using the same pot, cook the celery, onion, bell peppers, and garlic until softened and fragrant, about 5 minutes.
  3. Add Potatoes and Broth: Return the sausage to the pot and add the diced potatoes. Pour in the chicken or vegetable broth until the potatoes are covered by about an inch. Bring to a boil, then reduce heat to a simmer. Cook until the potatoes are tender, approximately 15-20 minutes.
  4. Season and Simmer: Stir in the Cajun seasoning, adjusting the amount according to your preferred spice level. Let the soup simmer for an additional 10 minutes to allow the flavors to meld together.
  5. Blend and Add Cream: For a creamier texture, partially puree the soup with an immersion blender or carefully blend half the soup and return it to the pot. Stir in the heavy cream or half-and-half to achieve a rich, velvety finish. Warm through without boiling.
