This rustic yet elegant dish combines a crispy caramelized topping with tender, flavorful peaches inside, perfect for cozy family dinners or entertaining guests year-round.

Ingredients

Scale

Fruit Filling

  • 4 cups fresh peeled and sliced peaches or canned peaches (drained)
  • 3/4 cup granulated sugar (divided)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice

Cobbler Topping

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 1/3 cup milk or buttermilk

Instructions

  1. Prepare the Peaches: Peel and slice fresh peaches or drain canned peaches thoroughly to remove excess liquid. In a mixing bowl, toss the peaches with 1/2 cup sugar, cinnamon, nutmeg, and lemon juice to brighten and balance the sweetness.
  2. Make the Cobbler Batter: In another bowl, whisk together flour, remaining sugar, baking powder, salt, cinnamon, and nutmeg. Cut in cold butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in milk until a thick batter forms that can be dropped by spoonfuls.
  3. Assemble in Cast Iron Skillet: Pour the peach mixture into a well-seasoned 8 to 10-inch cast iron skillet, spreading it evenly. Drop spoonfuls of the batter on top, leaving gaps so the peaches peek through for a rustic look.
  4. Bake to Golden Perfection: Preheat the oven to 375°F (190°C) and bake the cobbler for 40-45 minutes. The topping should be puffed, golden brown, and slightly crisp, with the filling bubbling underneath.

Notes

  • Use ripe, juicy peaches for the best flavor.
  • Keep butter cold to create flaky layers in the crust.
  • Preheat your cast iron skillet to improve crust crispness.
  • Mix batter just until combined to keep the topping light.
  • Let cobbler rest 10-15 minutes after baking for the filling to thicken.
  • Serve warm with vanilla ice cream or whipped cream and optional fresh mint.
  • Store leftovers covered in the fridge up to 3 days or freeze up to 2 months.
  • Reheat in a 350°F (175°C) oven for 15-20 minutes for best texture.
