Ingredients

Scale

Cheesecake Filling

  • 8 oz softened full-fat cream cheese
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Cookie Dough

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup semi-sweet or milk chocolate chips

Instructions

  1. Prepare the cheesecake filling: In a mixing bowl, beat softened cream cheese with granulated sugar and vanilla extract until smooth and creamy. Set aside or refrigerate briefly to firm up.
  2. Make the cookie dough: Cream together softened butter, granulated sugar, and brown sugar until fluffy. Add the egg one at a time, mixing well after each addition, then stir in vanilla extract. Gradually mix in the all-purpose flour, baking soda, and salt until just combined. Fold in chocolate chips evenly.
  3. Assemble cookies: Divide cookie dough into even portions. Flatten each piece and place a dollop of cheesecake filling in the center. Carefully wrap the dough around the filling, sealing it completely to enclose the creamy core.
  4. Bake to perfection: Place stuffed cookie balls about two inches apart on a parchment-lined baking sheet. Bake in a preheated oven at 350°F (175°C) for 12-15 minutes, until the edges are golden brown while centers remain soft.
  5. Cool and enjoy: Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack. This resting helps the cheesecake center set without losing its luscious texture.

Notes

  • Chill the dough for at least 30 minutes to minimize spreading during baking.
  • Seal cookie dough tightly around the cheesecake filling to prevent leaking.
  • Use room temperature ingredients for smoother mixing and better texture.
  • Remove cookies when edges are set but centers still look soft to maintain gooey cheesecake.
  • Experiment with cookie sizes for various serving options—larger for dessert, smaller for snacks.
