Main Ingredients

  • 1 large head of cauliflower (with sturdy stem for slicing into 23 thick steaks, about 3/4 inch each)
  • 23 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste (about 1/2 teaspoon)
  • Black pepper to taste (about 1/4 teaspoon)
  • 1 cup shredded melty cheese (cheddar, mozzarella, or Monterey Jack recommended)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Cauliflower: Remove the leaves and trim the stem from the cauliflower, keeping the base intact so the steaks hold together. Place the cauliflower on a cutting board and slice crosswise into 2 to 3 thick steaks, approximately 3/4 inch thick each.
  2. Season the Steaks: Brush both sides of each cauliflower steak generously with olive oil. Then sprinkle evenly with garlic powder, paprika, salt, and pepper to ensure every bite is flavorful.
  3. Cook the Steaks: Preheat the oven to 425°F (220°C). Place the cauliflower steaks on a baking sheet lined with parchment paper, leaving space between each steak for even roasting. Roast for about 20 minutes, flipping halfway through to develop golden, crispy edges on both sides.
  4. Add Cheese and Finish Roasting: After flipping, sprinkle a generous amount of shredded cheese over each steak. Return the sheet to the oven and bake for an additional 5 to 7 minutes until the cheese is melted, bubbly, and nicely browned.
  5. Garnish and Serve: Remove the steaks from the oven and garnish with freshly chopped parsley if desired. Serve hot to enjoy the cheesy, crispy goodness at its best.

Notes

  • Choose a firm, white cauliflower head with a tight curd and heavy feel for best results.
  • Use a sharp knife and slice gently to keep the steaks intact without breaking.
  • Do not overcrowd the baking sheet to promote even cooking and crispiness.
  • Opt for melty cheeses like cheddar, mozzarella, or Monterey Jack for a creamy, gooey topping.
  • Let the steaks rest for a minute after baking to allow the cheese to firm slightly before serving.
