Instructions

  1. Prep Your Ingredients: Drain and rinse canned chickpeas well to remove excess sodium or liquid. Chop cucumbers, halve cherry tomatoes, finely dice red onion, and roughly chop fresh herbs to ensure everything is ready to mix.
  2. Combine in a Large Bowl: Place the chickpeas, cucumbers, tomatoes, onions, and herbs in a spacious bowl so you can toss everything evenly without spilling.
  3. Dress the Salad: Drizzle olive oil and fresh lemon juice over the salad, then sprinkle salt and pepper to taste. If you’re adding feta cheese, crumble it on top now.
  4. Toss Gently: Using salad tongs or clean hands, gently toss everything until the dressing coats all ingredients evenly, taking care not to mash the chickpeas.
