Ingredients

Scale

Main Ingredients

  • 4 medium sweet potatoes
  • 23 chipotle peppers in adobo sauce, minced finely
  • 1 cup shredded sharp cheddar or Monterey Jack cheese, divided
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons butter
  • 2 green onions or a handful of chives, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Bake the Sweet Potatoes: Scrub sweet potatoes clean and poke several times with a fork. Place on a baking sheet and bake at 400°F (200°C) for 45 to 60 minutes until tender when pierced with a fork.
  2. Prepare the Filling: When potatoes are cool enough to handle, cut in half lengthwise and scoop out flesh into a bowl, leaving a thin shell intact. Mash the flesh with butter, sour cream, minced chipotle peppers, and a generous handful of grated cheese. Season with salt and pepper to taste.
  3. Fill the Potato Skins: Stuff the mashed mixture evenly back into the potato skins. Top each with the remaining shredded cheese for a golden, bubbly finish.
  4. Bake Again for Perfection: Place stuffed potatoes on the baking sheet and bake at 375°F (190°C) for 15 to 20 minutes until the cheese is melted and slightly browned.

Notes

  • Choose uniformly sized sweet potatoes for even cooking.
  • Do not overstuff the potato skins to prevent breaking.
  • Mash filling to your preferred texture—creamy or slightly chunky.
  • Add chipotle peppers gradually to control the heat level.
  • Line baking trays with parchment paper or foil for easy cleanup.
