Chocolate Chip Cookie Dough Brownie Bites

Hawaiian Style Baked Brie with Pineapple & Mango is a tropical-inspired appetizer combining creamy melted brie cheese wrapped in golden puff pastry and topped with sweet, juicy pineapple and mango. This easy-to-make, beautifully presented dish offers a perfect balance of sweet and savory flavors, making it ideal for parties, holidays, or casual gatherings.

Ingredients

Scale

Cheese and Pastry

  • 1 whole round Brie cheese (about 8 ounces)
  • 1 sheet puff pastry (use gluten-free if needed)
  • 1 egg (beaten, for egg wash)

Fruit Topping

  • 1/2 cup fresh pineapple, diced
  • 1/2 cup fresh mango, diced
  • 12 teaspoons honey

Add-Ons and Garnish

  • 1/4 cup chopped macadamia nuts (optional)
  • Fresh mint leaves (for garnish)

Instructions

  1. Prepare the Fruit Topping: Dice fresh pineapple and mango into small, bite-sized pieces. In a small bowl, toss the fruit with a drizzle of honey to enhance natural sweetness and set aside.
  2. Prep the Puff Pastry and Brie: Roll out the puff pastry sheet on a lightly floured surface. Place the round of brie cheese in the center. If desired, sprinkle chopped macadamia nuts on top of the brie for added crunch.
  3. Add the Fruit Mixture: Evenly pile the pineapple and mango mixture on top of the brie, keeping most of it on top to avoid leaking during baking.
  4. Wrap and Seal: Carefully fold the puff pastry around the brie and fruit, pinching and folding the edges to seal completely. Brush the surface and edges of the pastry with beaten egg wash to ensure a golden, shiny crust.
  5. Bake Until Golden: Place the wrapped brie on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the puff pastry is puffed and golden brown.
  6. Garnish and Serve: Allow the baked brie to cool for about 5 minutes. Garnish with fresh mint leaves and serve warm with crackers, sliced baguette, or your favorite accompaniments.

Notes

  • Use fresh pineapple and mango for best flavor and texture; canned or frozen fruit will lack freshness.
  • Don’t overfill the fruit topping to prevent juices from making the pastry soggy.
  • Keep puff pastry chilled until just before baking for maximum flakiness.
  • Serve baked brie warm for the best gooey texture and taste.
  • For easy entertaining, assemble the brie and fruit topping ahead, then bake fresh when ready to serve.
  • Optional variations include using toasted coconut flakes instead of nuts, adding a spicy kick with cayenne or jalapeño, swapping tropical fruits for berries, using gluten-free puff pastry, or experimenting with herbs like basil or cilantro.
