  • 1 tablespoon oil or sausage drippings (from cooking sausages)

Instructions

  1. Prepare the Potatoes: Peel and chop the potatoes into even chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes, then drain well.
  2. Cook the Sausages: While the potatoes are boiling, heat a skillet over medium heat and add a splash of oil. Cook the sausages for 12-15 minutes, turning regularly to brown evenly and cook through.
  3. Make the Onion Gravy: Using the same pan, sauté sliced onions in the sausage drippings or added oil until soft and golden. Sprinkle in flour and cook to form a roux. Gradually whisk in beef or vegetable broth to create a smooth, flavorful gravy. Simmer until thickened, then season with salt and pepper.
  4. Mash the Potatoes: Return the drained potatoes to the pot, add butter and warmed milk or cream, then mash to your preferred smoothness. Season with salt and pepper to taste.
  5. Plate and Serve: Slice the sausages if desired and place them atop the mashed potatoes. Pour generous spoonfuls of onion gravy over the top and serve immediately, garnished with fresh parsley or chives if desired.
