Ingredients

Scale

Main Ingredients

  • 68 fresh garlic cloves, peeled and thinly sliced
  • 1 large onion, peeled and thinly sliced
  • 4 cups chicken or vegetable broth
  • 46 slices of baguette, thinly sliced
  • 2 tablespoons olive oil or butter
  • Salt, to taste
  • Freshly ground black pepper, to taste

Herbs and Cheese

  • 2 teaspoons fresh thyme leaves or chopped parsley
  • Optional: 1/2 cup grated Gruyère or Parmesan cheese

Instructions

  1. Prepare the Garlic and Onions: Peel and finely slice the garlic cloves and onions. In a large pot, gently sauté them in olive oil or butter over medium-low heat until soft, golden, and fragrant. This slow cooking process (about 15-20 minutes) is essential to develop the sweet, mellow garlic flavor that defines the soup.
  2. Add the Broth and Simmer: Pour in the chicken or vegetable broth and bring the mixture to a gentle simmer. Allow it to simmer uncovered for 20-25 minutes, stirring occasionally to let the garlic and onion flavors infuse deeply into the broth.
  3. Prepare the Bread and Cheese: While the soup simmers, slice the baguette into thin rounds and toast them until crispy. Grate the cheese if using and set aside to sprinkle on top of the bread before broiling.
  4. Finalize the Soup: Season the soup with salt, pepper, and fresh herbs such as thyme or parsley. For a creamier texture, optionally blend part of the soup and stir it back in. Ladle the soup into oven-safe bowls, place toasted baguette slices on top, sprinkle with cheese, and put under the broiler for a few minutes until the cheese bubbles and browns.

Notes

  • Roast garlic beforehand for a deeper, sweeter flavor.
  • Slow sauté garlic and onions to avoid bitterness.
  • Use a sturdy baguette that holds up well when soaked.
  • Add fresh herbs at the end for bright aroma and flavor.
  • Season gradually to prevent over-salting, especially if broth is salty.
