Sweet Potatoes and Base

  • 4 medium sweet potatoes

  • 2 tablespoons butter
  • 1/2 cup sour cream
  • 12 chipotle peppers in adobo sauce, finely chopped (adjust to taste)

  • Black pepper, to taste

Cheese and Garnish

  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, sliced
  • Optional: fresh cilantro or parsley for garnish

Instructions

  1. Bake the Sweet Potatoes: Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and prick them a few times with a fork. Rub the skins with olive oil and a pinch of salt, then place directly on the oven rack and bake for 45-60 minutes until tender.
  2. Prepare the Filling: Once baked and slightly cooled, cut the sweet potatoes in half lengthwise and scoop out the flesh into a large bowl, leaving the skins intact. Mash the flesh with butter, sour cream, finely chopped chipotle peppers, salt, and pepper until creamy and well combined.
  3. Assemble and Add Cheese: Spoon the mashed potato mixture back into each sweet potato skin. Generously sprinkle shredded cheddar cheese over the top of each stuffed potato half.
  4. Bake Again: Place the stuffed sweet potatoes on a baking sheet. Brush the skins with a little olive oil to keep them crisp, then bake for another 15-20 minutes until the cheese is melted, bubbly, and slightly golden.
  5. Garnish and Serve: Remove from the oven and garnish with sliced green onions and optional fresh herbs like cilantro or parsley. Serve warm and enjoy the harmonious blend of smoky, cheesy, and spicy flavors.
