Bang Bang Sauce

  • ¼ cup sweet chili sauce
  • 12 tsp sriracha (adjust for spice preference)
  • 1 tsp fresh lime juice

Instructions

  1. Prepare the Salmon: Cut the fresh salmon fillets into bite-sized chunks, about 1 to 1.5 inches, ensuring uniform size for even cooking and consistent crunch.
  2. Set Up Your Breading Station: In a shallow dish, place the flour or breadcrumbs for dredging. In another bowl, beat the eggs to create the egg wash. And in a third dish, spread the panko breadcrumbs for the crispy coating.
  3. Coat the Salmon: First, dredge the salmon pieces in flour, shaking off any excess. Next, dip them into the egg wash to let the coating stick, then press each piece into the panko breadcrumbs until thoroughly covered.
  4. Fry Until Golden and Crispy: Heat oil in a skillet over medium-high heat. Carefully place the coated salmon bites in the hot oil, cooking in batches to avoid overcrowding. Fry them for 2-3 minutes per side until golden brown and crispy.
  5. Prepare the Bang Bang Sauce: While the salmon cooks, mix mayonnaise, sweet chili sauce, sriracha, and a squeeze of lime juice in a small bowl. Adjust the spice level to your taste.
  6. Toss and Serve: Once the salmon bites are done, drain excess oil on paper towels. Toss the bites lightly in the bang bang sauce until well coated but still crunchy. Serve immediately and enjoy!
