Shrimp and Marinade

  • 1 lb fresh shrimp, peeled and deveined
  • Juice of 3 fresh limes
  • Juice of 2 fresh oranges

Fresh Vegetables & Herbs

  • 1 red onion, thinly sliced or finely diced
  • 2 ripe tomatoes, diced
  • 1 jalapeño or serrano pepper, finely diced (seeds removed for less heat)
  • 1 generous bunch fresh cilantro, chopped
  • 1 ripe avocado, cubed

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Shrimp: Chop raw shrimp into bite-sized pieces. Place them in a glass or ceramic bowl and pour over the juice of fresh limes and oranges. Cover and refrigerate for 15-20 minutes, or until shrimp turn opaque and firm, allowing the citrus acid to “cook” them.
  2. Chop the Fresh Ingredients: While the shrimp marinates, finely dice the red onion, tomatoes, and jalapeño (remove seeds if preferred less heat). Chop the cilantro and cube the avocado. Keep ingredients chilled until ready to combine.
  3. Combine Everything: Drain excess citrus juice from the shrimp to avoid sogginess. Gently fold in the chopped onion, tomato, jalapeño, cilantro, and avocado. Season with salt and pepper to taste, being careful not to mash the avocado. Toss lightly to mix flavors.
  4. Chill & Serve: Let the ceviche rest in the refrigerator for 10-15 minutes to allow flavors to meld. Serve chilled with tortilla chips, tostadas, or in crisp lettuce leaves for a fresh and vibrant bite.
