Ingredients

Scale

Protein

  • 1.5 to 2 lbs chicken breasts or thighs

Vegetables & Beans

  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels (no need to thaw)
  • 1 medium onion, diced
  • 23 cloves garlic, minced

Liquids & Spices

  • 4 cups chicken broth (low-sodium preferred)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin

Finishing Touches

  • 2 tablespoons fresh lime juice
  • 1 cup tortilla strips or chips (for topping)
  • Optional toppings: chopped fresh cilantro, shredded cheese (cheddar or Monterey Jack), sliced avocado, sour cream, sliced green onions

Instructions

  1. Prepare Your Ingredients: Dice the onions, mince the garlic, and measure out your chili powder and cumin. No need to thaw frozen corn; just have everything ready for layering.
  2. Layer Ingredients in the Crockpot: Place the chicken breasts or thighs at the bottom of the slow cooker. Pour the fire-roasted diced tomatoes, black beans, corn, diced onion, minced garlic, chili powder, cumin, and chicken broth on top without stirring to allow flavors to meld during cooking.
  3. Cook on Low or High: Set your crockpot on low for 6-8 hours or high for 3-4 hours, depending on your schedule. Let the soup cook until the chicken is tender and flavors are well combined.
  4. Shred Chicken and Add Freshness: Remove the cooked chicken from the crockpot and shred it using two forks. Return the shredded chicken to the soup, stir in fresh lime juice, and adjust seasonings to taste to brighten and balance the soup.
  5. Serve with Crunch and Color: Ladle the hot soup into bowls and top with crispy tortilla strips, shredded cheese, chopped cilantro, and any other desired garnishes like avocado slices or sour cream for texture and flavor contrast.

Notes

  • Use bone-in chicken for deeper broth flavor.
  • Don’t skip the fresh lime juice—it enhances and balances the flavors.
  • Prepare garnishes like cilantro, cheese, and avocado slices ahead to save time at serving.
  • Add tortilla strips just before serving to keep them crispy.
  • Homemade chicken broth intensifies flavor but store-bought works well too.
