Instructions

  1. Prepare the Chicken Filling: In a bowl, combine the cooked shredded chicken with shredded cheese, chili powder, cumin, garlic powder, and sour cream or Greek yogurt. Mix thoroughly until the filling is evenly coated and juicy.
  2. Warm the Tortillas: Lightly warm the corn tortillas in the microwave for about 20-30 seconds or on a skillet over medium heat until flexible, to prevent cracking when rolling.
  3. Assemble the Taquitos: Place a generous spoonful of the chicken mixture near the edge of each tortilla. Roll the tortilla tightly into a tube shape and tuck the end underneath to seal.
  4. Arrange and Prepare for Baking: Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper or a wire rack. Lightly spray or brush the taquitos with cooking spray or olive oil to promote crispiness.
  5. Bake Until Golden and Crispy: Bake in a preheated oven at 425°F (220°C) for 15 to 20 minutes. Flip the taquitos halfway through baking to ensure they crisp evenly on all sides.
