Ingredients

Scale

Vegetables

  • 2 firm English or Persian cucumbers, thinly sliced into rounds or half-moons
  • 1 head Romaine lettuce, chopped into bite-sized pieces

Dressing

  • ½ cup Caesar dressing (creamy or light version)
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced (optional)
  • 1 teaspoon anchovy paste (optional)

Cheese and Toppings

  • ¼ cup freshly grated Parmesan cheese
  • ½ cup croutons (optional, for crunch)
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Vegetables: Wash and dry the cucumbers and Romaine lettuce thoroughly. Slice the cucumbers into thin rounds or half-moons for a refreshing crunch and chop the Romaine into bite-sized pieces for easy eating.
  2. Make or Select Your Caesar Dressing: Whisk together the dressing ingredients or choose a quality store-bought Caesar dressing. For a homemade version, combine mayonnaise, fresh lemon juice, minced garlic, anchovy paste, Dijon mustard, grated Parmesan, and freshly ground black pepper until smooth.
  3. Toss the Salad: In a large bowl, gently toss the cucumbers and Romaine lettuce with just enough Caesar dressing to coat everything lightly but thoroughly, ensuring each leaf and slice carries the creamy, tangy flavor.
  4. Add Toppings: Sprinkle grated Parmesan cheese over the salad, add crunchy croutons for texture (if using), and finish with a final grind of fresh black pepper. Optionally, add a squeeze of fresh lemon juice to brighten the entire dish.

Notes

  • Use freshly picked cucumbers and crisp Romaine lettuce for best flavor and texture.
  • Add the dressing just before serving to keep cucumbers and lettuce crisp.
  • Make homemade croutons by toasting bread cubes with garlic and herbs for extra flavor.
  • Taste the dressing before adding to balance saltiness from anchovies and Parmesan.
  • Use a salad spinner to thoroughly dry lettuce to avoid sogginess.
