Ingredients

Scale

Main Ingredients

  • 2 large fresh cucumbers, firm and crisp
  • 1/4 cup creamy or crunchy peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, freshly minced
  • 1/2 teaspoon red pepper flakes or 1 teaspoon chili paste (adjust to taste)
  • 1 teaspoon sesame oil
  • 24 tablespoons water (to adjust sauce consistency)

Optional Garnishes

  • 2 tablespoons chopped roasted peanuts
  • 2 tablespoons chopped fresh herbs (cilantro or mint)

Optional Variations

  • 12 tablespoons coconut milk (for creamier sauce)
  • Sunflower seed butter or tahini (as a peanut butter substitute for nut-free version)
  • Toasted sesame seeds or crushed cashews (alternative toppings)
  • 1 teaspoon freshly grated ginger (for added zing)

Instructions

  1. Prepare the Cucumbers: Wash the cucumbers thoroughly. Slice them into thin rounds or half-moons according to your preference. If cucumbers are particularly watery, remove some seeds to keep the slices crisp.
  2. Make the Spicy Peanut Sauce: In a bowl, combine peanut butter, soy sauce, rice vinegar, minced garlic, honey or maple syrup, chili paste or red pepper flakes, and sesame oil. Whisk well, gradually adding water until the sauce reaches a smooth, pourable consistency.
  3. Toss Cucumbers with Sauce: Place the sliced cucumbers into a mixing bowl, pour the prepared peanut sauce over them, and gently toss to coat each piece evenly ensuring the sauce clings to the cucumbers.
  4. Garnish and Serve: Sprinkle with chopped peanuts and fresh herbs such as cilantro or mint. Optionally add extra chili flakes or a squeeze of lime juice to brighten the flavors just before serving.

Notes

  • Chill the sliced cucumbers before mixing to keep them extra crisp and refreshing.
  • Taste and adjust the sauce for sweetness, acidity, saltiness, and spiciness based on your preference.
  • Use freshly minced garlic instead of pre-minced for a sharper, fresher flavor.
  • Add water gradually to achieve the desired sauce consistency for drizzling or dipping.
  • Serve immediately or slightly chilled for the best flavor and texture.
  • Store leftovers in an airtight container in the fridge for up to 2 days, draining excess liquid before serving again.
  • Do not freeze, as cucumbers lose their crunch and the sauce texture changes upon thawing.
  • Reheating is not recommended; serve cold or at room temperature.
