Instructions

  1. Prepare and Sauté the Mushrooms: Clean and slice your mushrooms evenly. Heat butter or olive oil in a large pot over medium heat, then add mushrooms in batches. Sauté until they release moisture and turn golden brown, creating a rich base full of flavor.
  2. Sauté Aromatics for Flavor: To the pot, add chopped onions and minced garlic. Cook until they become translucent and fragrant, which enhances the warmth and depth of your soup.
  3. Deglaze and Add Broth: Pour in a splash of white wine if using, scraping up the browned bits from the bottom—the secret to extra flavor. Then, add your vegetable or chicken broth, and bring to a gentle boil.
