  • 2 large red onions, thinly sliced

Instructions

  1. Prepare the Caramelized Red Onion: Heat the olive oil in a pan over medium heat. Add the thinly sliced red onions and cook slowly, stirring frequently, until they are deeply softened and caramelized, about 15-20 minutes. This develops the rich, sweet flavor base for the plait.
  2. Roll Out the Puff Pastry: Lightly flour your work surface and roll the puff pastry into a roughly 12 by 10-inch rectangle, ensuring an even thickness. Place the rolled pastry onto a baking tray lined with parchment paper.
  3. Add the Filling: Spread the caramelized onions down the center of the pastry, leaving about 3 inches free on each side. Sprinkle the crumbled feta cheese evenly over the onions. If using, scatter fresh herbs and season with black pepper.
  4. Create the Plait Shape: Cut 1-inch wide strips approximately 3 inches deep along both sides of the pastry. Fold the strips alternately over the filling in a braided pattern, crossing them from left to right. Seal the ends and gently press the edges to keep the filling inside.
  5. Brush and Bake: Beat the egg and brush it over the top of the plait for a glossy golden finish. Preheat the oven to 200°C (400°F) and bake the plait for 25-30 minutes, or until puffed and crisp. Allow to cool slightly before slicing and serving.
