Frozen Yogurt Bark Snack

A quick and easy Frozen Yogurt Bark Snack that combines creamy Greek yogurt with fresh fruits, nuts, seeds, and optional chocolate chips for a healthy, refreshing, and customizable treat perfect for hot summer days.

Ingredients

Scale

Base

  • 2 cups full-fat Greek yogurt
  • 2 tablespoons honey or maple syrup

Fruits

  • 1/2 cup mixed fresh berries (such as strawberries, blueberries, raspberries)
  • 1/4 cup kiwi, sliced
  • 1/4 cup mango chunks

Nuts and Seeds

  • 2 tablespoons chopped almonds or pistachios
  • 1 tablespoon chia seeds

Optional Toppings

  • 2 tablespoons dark chocolate chips or cacao nibs

Instructions

  1. Prepare Your Baking Sheet: Line a baking sheet or tray with parchment paper or a silicone mat; this non-stick surface is key for easy removal once your bark is frozen.
  2. Mix Yogurt and Sweetener: In a bowl, stir together Greek yogurt with honey or maple syrup until well combined, creating a smooth, slightly sweet base.
  3. Spread Yogurt Evenly: Pour the yogurt mixture onto the prepared sheet and spread it into a thin, even layer around 1/4 inch thick for ideal freezing and easy breaking.
  4. Add Fruits and Toppings: Scatter your chosen fresh fruits, nuts, seeds, and optional chocolate chips evenly over the yogurt, gently pressing them in so they stick once frozen.
  5. Freeze Until Firm: Place the tray in the freezer for at least 3 hours or until the yogurt bark is completely firm and frozen solid.
  6. Break Into Pieces: Once set, remove from freezer and gently break the bark into bite-sized pieces to serve as a refreshing snack.

Notes

  • Use full-fat Greek yogurt for a creamier texture and richer flavor that holds up well when frozen.
  • Drain excess liquid by straining yogurt through a cheesecloth for 30 minutes to avoid watery bark.
  • Don’t overload toppings to help the bark freeze evenly and break cleanly.
  • Work quickly to spread and top the bark promptly to prevent yogurt from melting.
  • Store leftovers in airtight containers or freezer bags to maintain freshness and texture.
