Instructions

  1. Prepare the Potatoes: Wash and dry the baby potatoes, then cut them into halves or quarters for even cooking. Heat olive oil in a skillet over medium heat and add the potatoes, seasoning with salt and pepper. Cook for about 15 minutes, turning occasionally until golden brown and crisp outside but tender inside.
  2. Cook the Beef Bites: While the potatoes cook, pat the beef bites dry with a paper towel and season with salt and pepper. In the same skillet (or a separate one), melt 1 tablespoon of butter over medium-high heat. Sear the beef pieces until browned on all sides and cooked to your desired doneness, about 3-4 minutes depending on size. Remove and set aside.
  3. Make the Garlic Butter Sauce: Reduce heat to medium and add 2 tablespoons of butter to the skillet along with the finely minced garlic (and red pepper flakes, if using). Stir continuously for 1-2 minutes until fragrant but not burned, allowing the garlic butter to infuse the flavors.
  4. Combine and Finish Cooking: Return the cooked beef bites and potatoes to the skillet, tossing gently to coat everything evenly with the garlic butter sauce. Let cook together for an additional 2-3 minutes to meld flavors beautifully.
