Ingredients

Scale

Steak Bites

  • 1 lb sirloin or ribeye steak, trimmed and cut into bite-sized cubes
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tbsp cooking oil (e.g., vegetable or canola oil)

Garlic & Herb Butter Sauce

  • 3 tbsp unsalted butter
  • 3 garlic cloves, freshly minced
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped (plus more for garnish)

Mashed Potatoes

  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 1/2 cup warm heavy cream or milk
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the mashed potatoes: Peel and cube the Yukon Gold potatoes evenly. Boil them in salted water until tender, about 15 minutes. Drain thoroughly and mash them with butter and warm cream or milk until smooth and creamy. Season with salt and freshly ground black pepper to taste.
  2. Cut and season the steak bites: Trim any excess fat from the steak and cut it into bite-sized cubes. Season generously with salt and freshly ground black pepper to enhance the beef’s natural flavor.
  3. Sear the steak bites: Heat a skillet over medium-high heat with a small amount of cooking oil. Place the steak bites in a single layer and sear for 2–3 minutes on each side until nicely browned but still juicy on the inside. Remove from the skillet and set aside.
  4. Make the garlic and herb butter sauce: In the same skillet, reduce heat to medium and add the butter. Stir in minced garlic, rosemary, thyme, and parsley. Cook for 1–2 minutes until fragrant to infuse the butter with deep aroma.
  5. Combine and finish: Return the steak bites to the skillet and toss gently to coat evenly in the garlic and herb butter sauce. Let them warm through for a minute or two to absorb the flavors.
  6. Plate and serve: Serve the sizzling steak bites over a generous bed of creamy mashed potatoes. Spoon any extra garlic herb butter sauce over the top for maximum indulgence. Garnish with freshly chopped parsley or chives if desired.

Notes

  • Let steak cubes come to room temperature before cooking to ensure even searing.
  • Pat the steak bites dry to achieve a perfect brown crust.
  • Do not overcrowd the pan; cook steak bites in batches if necessary to prevent steaming.
  • Use fresh herbs for the most vibrant and bright flavor in the butter sauce.
  • Warm the cream or milk before adding to the mashed potatoes for a smooth, silky texture.
  • Let steak bites rest briefly off heat after cooking to redistribute juices and maximize tenderness.
  • For a spicy variation, add red pepper flakes or cayenne to the butter sauce.
  • Swap herbs like rosemary and thyme with tarragon or basil for different flavor profiles.
  • Use roasted garlic instead of raw for a milder, sweeter taste.
  • Mix sour cream or cream cheese into mashed potatoes for extra tang and creaminess.
  • Try chicken bites or portobello mushrooms as alternatives to steak for varied preferences.
