Ingredients

Scale

Shrimp and Pasta

  • 8 ounces raw shrimp, peeled and deveined
  • 8 ounces spaghetti or linguine

Sauce and Seasoning

  • 4 cloves fresh garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Optional Garnish

  • Grated Parmesan cheese, for serving

Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain, reserving 1 cup of pasta water, and set pasta aside.
  2. Sauté the Garlic: In a large skillet over medium heat, heat the olive oil and butter. Add the minced garlic and red pepper flakes, cooking gently while stirring frequently until fragrant and golden, about 1-2 minutes. Take care not to burn the garlic.
  3. Cook the Shrimp: Add the shrimp to the skillet and season with salt and black pepper. Cook for about 2 minutes per side until the shrimp turn pink and opaque, stirring occasionally for even cooking.
  4. Combine Pasta and Shrimp: Toss the cooked pasta into the skillet with the shrimp and garlic sauce. Add reserved pasta water as needed to create a silky sauce that coats the pasta and shrimp evenly.
  5. Finish with Fresh Touches: Remove from heat, then stir in fresh lemon juice and chopped parsley. If desired, sprinkle with grated Parmesan cheese. Toss everything together before serving.

Notes

  • Don’t overcook the shrimp; remove them from heat as soon as they’re pink to avoid a rubbery texture.
  • Use fresh garlic for a sweeter, more vibrant flavor than pre-minced options.
  • Reserve pasta water to help create a perfect sauce texture that clings to pasta and shrimp.
  • Use a large sauté pan or skillet for even cooking and easy tossing of ingredients.
  • Cook garlic over medium or medium-low heat to prevent burning.
