Mashed Potatoes

  • 2 lbs Yukon Gold or Russet potatoes, peeled and cut into chunks
  • 4 tbsp butter
  • 1/2 to 3/4 cup warm milk or cream
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes: Peel and cut the potatoes into evenly sized chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15 minutes. Drain the potatoes and return them to the pot. Mash with butter and warm milk or cream until smooth and creamy.
  2. Sauté the Garlic Shrimp: In a large skillet, melt butter over medium heat. Add minced garlic and cook until fragrant but not browned, about 1 minute. Add the shrimp, season with salt and pepper, and cook 2-3 minutes per side until pink and opaque.
  3. Finish with Fresh Flavors: Squeeze fresh lemon juice over the cooked shrimp. Sprinkle with chopped parsley to add brightness and a fresh herbal finish.
  4. Plate and Serve: Spoon a generous portion of mashed potatoes onto each plate. Arrange the garlic shrimp on top or beside the potatoes. Drizzle any remaining garlic butter sauce from the skillet over the dish for extra flavor and moisture.
