Instructions

  1. Prepare the Pomegranate Juice and Gelatin: Gently heat 1 cup of fresh pomegranate juice with 1/4 cup sugar until dissolved. Soften gelatin sheets in cold water, then stir into the warm juice until fully dissolved, creating a smooth base for the glaze and mousse.
  2. Whip the Cream: Chill your mixing bowl and whisk. Whip 2 cups heavy cream to soft peaks, giving the mousse an airy, silky texture.
  3. Melt the White Chocolate: Using a double boiler or low heat, gently melt 6 oz white chocolate. Let it cool slightly before folding into the whipped cream.
  4. Combine the Mousse Ingredients: Fold the cooled pomegranate juice and gelatin mixture into the white chocolate and whipped cream blend gently and thoroughly, preserving the mousse’s lightness.
  5. Mold the Domes: Pour or pipe the mousse into silicone dome molds, tapping gently to release air bubbles. Refrigerate for at least 4 hours until the mousse sets firm yet velvety.
  6. Prepare the Glossy Pomegranate Glaze: Heat 1/2 cup pomegranate juice, 1/4 cup sugar, water, and gelatin until a smooth, shiny glaze forms. Cool slightly to 90°F–95°F, optimal for glazing.
  7. Glaze and Chill: Remove mousse domes from molds and place on a rack. Pour the glossy glaze evenly over each dome for a mirror-like coat. Chill briefly until set and ready to serve.
