Bowl Assembly

  • 1 cup cooked rice or quinoa
  • 1 medium tomato, cut into wedges
  • ¼ medium red onion, thinly sliced
  • Extra fresh dill and olive oil for garnish (optional)

Instructions

  1. Prepare the Chicken Marinade: Whisk together olive oil, lemon juice, minced garlic, salt, pepper, and chopped fresh dill in a bowl. Coat the chicken breasts with the marinade and let them sit for at least 15 minutes to absorb the flavors.
  2. Make the Tzatziki Sauce: While the chicken marinates, grate the cucumber and squeeze out excess moisture. In a separate bowl, combine the grated cucumber with Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper. Mix well and refrigerate to allow the flavors to meld.
  3. Cook the Chicken: Grill or pan-sear the marinated chicken breasts over medium-high heat for 6-8 minutes per side until cooked through and nicely charred. Remove from heat and let rest for a few minutes before slicing.
