Instructions

  1. Prepare the Meat Mixture: In a large bowl, combine the ground beef or lamb with finely grated onion, chopped parsley, ground cumin, allspice, salt, and pepper. Drizzle in olive oil and gently mix everything together with your hands until well combined but not overworked. This ensures the kebabs stay tender.
  2. Shape the Kebabs: Divide the mixture into equal portions and shape them around skewers, forming long, oval-shaped logs about ¾ inch thick. Press firmly so the meat adheres well to the skewers, which helps prevent falling apart on the grill.
  3. Preheat the Grill: Heat your grill to medium-high heat, around 400°F (200°C). Make sure the grates are clean and lightly oiled to avoid sticking.
  4. Grill the Kafta Kebabs: Place the skewers on the hot grill and cook for about 3-4 minutes per side, turning carefully to achieve even grilling and nice grill marks. The kebabs should be cooked through and juicy, with a slightly charred exterior.
