Instructions

  1. Prepare the Crust: Start by crushing graham crackers into fine crumbs. Mix them with melted butter until the mixture resembles wet sand, then firmly press it into mini muffin liners or a mini cheesecake pan to form the crust base.
  2. Mix the Cheesecake Filling: Beat softened cream cheese until smooth, then gradually add granulated sugar and mix until fluffy. Incorporate the egg and vanilla extract one at a time, mixing thoroughly after each addition. Finally, add green food coloring a drop at a time until you achieve that bright Grinch green shade.
  3. Assemble and Bake: Pour the green cheesecake mixture over the crust in each mini mold, filling about 3/4 full. Bake in a preheated oven at 325°F (160°C) for approximately 15-18 minutes until the edges are set but the center still slightly jiggles.
  4. Cool and Chill: Allow the mini cheesecakes to cool to room temperature, then chill them in the refrigerator for at least 2 hours to fully set and develop flavor.
