Ingredients

Scale

Base and Protein

  • 1215 mini bell peppers
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup black beans, rinsed and drained

Toppings

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup salsa or pico de gallo
  • 1 avocado or 1/2 cup guacamole
  • 2 lime wedges

Seasonings for Chicken

  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Mini Bell Peppers: Wash the mini bell peppers thoroughly. Slice each pepper in half lengthwise and remove the seeds. Pat dry and arrange them as the base for your nachos.
  2. Cook and Season the Chicken: In a skillet over medium heat, cook the diced or shredded chicken breast with cumin, chili powder, garlic powder, salt, and pepper. Stir occasionally until the chicken is heated through and evenly coated with spices.
  3. Assemble the Nachos: Place the mini bell pepper halves on a baking sheet. Spoon a portion of the seasoned chicken onto each pepper half, then add black beans and sprinkle shredded cheese on top.
  4. Melt the Cheese: Bake the assembled peppers in a preheated oven at 375°F (190°C) for 8-10 minutes, or until the cheese has melted and is bubbling.
  5. Add Fresh Toppings: Remove from the oven and garnish each pepper half with fresh cilantro, salsa or pico de gallo, avocado or guacamole, and a squeeze of fresh lime juice.

Notes

  • Use fresh mini bell peppers for the best crunch and vibrant color.
  • Cook chicken in advance to speed up assembly.
  • Don’t overfill the peppers to prevent sogginess and help them hold their shape.
  • Use low-fat cheese varieties for a lighter dish without sacrificing flavor.
  • Serve salsa or guacamole slightly chilled for a refreshing contrast.
