Ingredients

Scale

Dry Ingredients

  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 tbsp sugar
  • 1 tsp salt

Wet Ingredients

  • 1 ¼ cups warm water (about 110°F/43°C)
  • 4 tbsp butter
  • 1 large egg (optional, for dough and brushing)

Herbs and Flavorings

  • 2 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves, finely chopped
  • 3 garlic cloves, minced

Instructions

  1. Prepare the Herb-Garlic Infused Butter: Melt butter gently in a small pan. Add minced garlic, chopped rosemary, and thyme. Simmer on low heat for 2 minutes to infuse flavors, then set aside to cool.
  2. Activate the Yeast: In a mixing bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for 5 to 10 minutes until foam forms, indicating the yeast is active.
  3. Make the Dough: To the yeast mixture, add flour, salt, cooled herb-garlic butter (reserve some for brushing), and egg if using. Mix until a rough dough forms. Knead by hand or with a stand mixer for 8 to 10 minutes until smooth, elastic, and slightly tacky.
  4. First Rise: Place dough in a lightly greased bowl, cover with a towel or plastic wrap, and let rise in a warm place for 1 to 1.5 hours until doubled in size.
  5. Shape the Rolls: Punch down dough gently to release air. Divide into equal portions and shape each into a smooth ball. Arrange on a greased or parchment-lined baking tray, spaced apart.
  6. Second Rise: Cover rolls loosely and let rise for 30 to 45 minutes until puffy and nearly doubled in size.
  7. Bake the Rolls: Preheat oven to 375°F (190°C). Brush tops with reserved herb-garlic butter. Bake 18 to 22 minutes until golden brown and hollow sounding when tapped.
  8. Cool and Serve: Cool rolls on a wire rack for 10 minutes before serving warm.

Notes

  • Use fresh herbs for the best flavor compared to dried.
  • Do not over-knead the dough to keep rolls tender.
  • Use warm water (not hot) to activate yeast without killing it.
  • Let dough rise fully for soft, fluffy rolls.
  • Brush rolls with herb-garlic butter both before and after baking for extra flavor and sheen.
