  • 4 oz pepperoni, diced

  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1 cup green bell peppers, chopped
  • 1/2 cup Kalamata olives, pitted and halved

Dressing and Herbs

  • 3/4 cup Italian dressing
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook and Cool the Pasta: Bring a large pot of salted water to a boil and cook the rotini or bowtie pasta until just al dente. Drain and rinse with cold water to stop cooking and cool the noodles for the salad.
  2. Chop Meats, Cheese, and Vegetables: Dice the salami, pepperoni, and ham into bite-sized pieces. Dice the provolone cheese. Slice cherry tomatoes in halves, thinly slice red onion, chop green bell peppers, and pit and halve Kalamata olives.
  3. Combine Ingredients in a Large Bowl: Place the cooled pasta into a large mixing bowl. Add all the chopped meats, cheese, and vegetables, tossing gently to combine everything evenly.
  4. Add Italian Dressing and Parsley: Pour the Italian dressing over the mixture and sprinkle with fresh parsley. Toss thoroughly so that every ingredient is coated with the flavorful vinaigrette.
  5. Chill and Serve: Refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature for the best taste.
