  • 1/2 lb fresh or refrigerated Mexican chorizo
  • 1 cup chipotle beans (canned, drained)
  • 1/2 cup shredded cheese (Monterey Jack, cheddar, or Mexican blend)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp fresh lime juice

Assembly

  • 12 crispy eggroll wrappers
  • Water or beaten egg (for sealing)

Frying

  • Neutral oil (vegetable or canola oil), enough for deep frying (about 4 cups)

Instructions

  1. Prepare the Filling: Cook the chorizo in a skillet over medium heat, breaking it up with a spatula until browned and cooked through. Drain excess grease, then add finely chopped onions and garlic and sauté until translucent and fragrant. Stir in chipotle beans and cook for a few more minutes to meld flavors.
  2. Add Cheese and Cilantro: Remove the pan from heat and stir in shredded cheese until it begins to melt. Toss in chopped fresh cilantro and a squeeze of lime juice to brighten the blend. Allow the filling to cool slightly before assembling to prevent the eggroll wrappers from tearing.
  3. Assemble the Eggrolls: Lay out an eggroll wrapper on a clean surface with a corner pointing towards you, like a diamond shape. Place a generous spoonful of filling near the bottom corner, fold the bottom corner over the filling, fold the sides inward snugly, and roll tightly towards the top corner. Seal the edge with a little water or beaten egg.
  4. Fry Until Crispy: Heat oil in a deep-sided pan or skillet to around 350°F (175°C). Carefully add eggrolls in batches, frying until golden brown and crispy on all sides, about 3-4 minutes. Remove and drain on paper towels to absorb excess oil.
  5. Serve Warm: Serve hot with your favorite dipping sauces or garnishes for an irresistible appetizer or meal.

  • Don’t overstuff the eggrolls to prevent tearing.
  • Keep eggroll wrappers covered with a damp cloth to avoid drying out.
  • Maintain oil temperature at 350°F (175°C) for even frying and crispiness.

  • For extra crispy eggrolls, consider double frying: first until light golden, cool, then a second quick fry before serving.
