  • 2 teaspoons baking powder

Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish. In a bowl, mix together the all-purpose flour, granulated sugar, and melted unsalted butter until crumbly. Press the mixture evenly and firmly into the bottom of the pan to form a solid base. Bake for about 15 minutes or until the crust begins to turn golden.
  2. Mix the Lemon Filling: While the crust bakes, whisk fresh lemon juice, lemon zest, granulated sugar, eggs, and baking powder together until smooth and well combined. This mixture will create a bright, tangy filling that sets beautifully.
  3. Bake the Filling: Pour the lemon filling over the warm crust evenly. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is firm around the edges but slightly jiggly in the center. It will continue to set as it cools.
  4. Chill and Slice: Remove the pan from the oven and let it cool completely at room temperature. Then refrigerate for at least one hour to allow the bars to firm up for neat slicing.
  5. Dust with Powdered Sugar: Just before serving, sprinkle a generous layer of powdered sugar over the top for a sweet, snowy finish that enhances both presentation and flavor.
