Ingredients

Scale

Vegetables

  • 3 cups mixed Normandy vegetables (cauliflower florets, sliced carrots, and broccoli florets)

Cheese and Dairy

  • 1 to 1 ½ cups sharp cheddar cheese, shredded

Oils, Herbs, and Seasonings

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves (or more to taste)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 teaspoon lemon zest for garnish

Instructions

  1. Prepare and Preheat: Preheat the oven to 425°F (220°C). Rinse and chop the Normandy blend vegetables into evenly sized pieces to ensure uniform roasting.
  2. Toss with Olive Oil and Garlic: In a large bowl, combine the chopped vegetables with olive oil, minced garlic, salt, and pepper. Toss well to coat all pieces thoroughly.
  3. Roast Vegetables: Spread the coated vegetables in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, until tender and the edges turn golden brown.
  4. Add Cheese and Herbs: Remove the baking sheet from the oven and evenly sprinkle shredded cheddar cheese over the hot vegetables. Top with fresh thyme leaves. Return to the oven for 5 more minutes, or until the cheese melts and starts to bubble.
  5. Serve and Enjoy: Let the vegetables cool slightly before transferring to a serving platter. Optionally, sprinkle with lemon zest to add brightness and contrast to the rich flavors.

Notes

  • Use fresh, crisp vegetables for the best roasting results and texture.
  • Do not overcrowd the baking sheet; spreading vegetables out ensures even roasting and caramelization.
  • Choose a sharp cheddar cheese to balance the sweetness of the roasted vegetables with its rich flavor.
  • Add cheese only during the last few minutes of roasting to avoid burning or overcooking it.
  • You can substitute fresh thyme with rosemary or oregano for a different herbal aroma.
