Instructions

  1. Prepare the Filling: Cook the chorizo in a skillet over medium heat until browned and cooked through. Drain excess fat. Add diced onions and minced garlic, sauté until fragrant and translucent. Stir in chipotle beans, corn, and any optional ingredients like jalapeños or tomatoes. Cook for a few minutes to combine flavors, then remove from heat. Mix in shredded cheese, chopped cilantro, and lime juice to brighten the filling.
  2. Assemble the Eggrolls: Place one eggroll wrapper on a clean surface. Spoon a generous amount of filling into the center. Fold the sides over and roll tightly, sealing the edges with a little water to prevent leaks. Repeat until all filling is used.
  3. Cook the Eggrolls: Heat vegetable oil in a deep skillet over medium-high heat. When hot, carefully fry eggrolls in batches until golden brown and crisp on all sides, about 2-3 minutes per side. Drain on paper towels. Alternatively, brush eggrolls lightly with oil and bake at 400°F (200°C) for 15-20 minutes, turning halfway through for even crisping.
