Red Strawberry Layer

  • 1 cup fresh strawberries, washed and hulled
  • 1 teaspoon fresh lemon juice
  • Honey or maple syrup, to taste (about 1 teaspoon)

White Yogurt Layer

  • 1 cup plain Greek yogurt
  • 1 teaspoon honey or maple syrup

Blue Blueberry Layer

  • 1 cup fresh blueberries, cleaned
  • 1 teaspoon fresh lemon juice
  • Honey or maple syrup, to taste (about 1 teaspoon)

Instructions

  1. Prepare the Red Strawberry Layer: Wash and hull about one cup of fresh strawberries. Blend them with a teaspoon of fresh lemon juice and a bit of honey until smooth. Pour this mixture into your popsicle molds filling about one-third of each. Freeze for about 30 minutes to allow the layer to firm up slightly.
  2. Make the White Yogurt Layer: In a bowl, mix plain Greek yogurt with a teaspoon of honey or maple syrup until creamy and slightly sweetened. Once the red layer is partially frozen, spoon the yogurt gently over it, filling another third of the mold. Freeze again for 30 minutes to let the layers set without mixing.
  3. Create the Blueberry Layer: Clean one cup of blueberries and blend with a splash of lemon juice and a touch of sweetener until smooth. Carefully pour or spoon the blueberry mixture over the yogurt layer, filling the popsicle molds completely. Insert sticks and freeze for at least 4 hours or overnight until fully set.
  4. Unmold and Enjoy: To remove the popsicles, briefly run warm water over the outside of the molds to loosen them, then gently pull the sticks out. Serve immediately or store as desired.

Notes

  • Use ripe, fresh fruit for the best flavor and color.
  • Freeze each layer sufficiently to keep clean, distinct stripes without blending colors.
  • Adjust sweetness according to your fruit’s natural sweetness by adding more or less honey or syrup.
  • For texture variation, leave some fruit pieces whole in one layer before blending.
