Reuben Puff Pastry Pinwheels

Reuben Puff Pastry Pinwheels

Reuben Puff Pastry Pinwheels are a delicious and easy-to-share snack that combines the classic flavors of a Reuben sandwich—tangy sauerkraut, savory corned beef, creamy Swiss cheese, and Thousand Island dressing—wrapped in flaky, golden puff pastry. Perfect for parties, appetizers, or quick bites, these crispy, cheesy pinwheels offer a flavorful and visually appealing treat that can be enjoyed warm or at room temperature.

Ingredients

Main Ingredients

  • Puff Pastry Sheets (thawed) – typically 1 sheet (about 12×10 inches)
  • Corned Beef, thinly sliced – 6 to 8 oz
  • Swiss Cheese, sliced or shredded – 4 oz
  • Sauerkraut, well-drained – 1/2 cup
  • Thousand Island Dressing – 1/4 cup
  • Mustard (optional) – 1 to 2 tsp
  • Egg Wash (1 egg beaten with 1 tbsp water) – for brushing

Instructions

  1. Prepare the Puff Pastry Base: Thaw puff pastry sheets according to package instructions until pliable but still chilled. Lightly flour your work surface and roll out the pastry into a 12 by 10 inch rectangle, ensuring an even surface ready to hold the fillings.
  2. Layer the Ingredients: Spread a thin, even layer of Thousand Island dressing over the pastry, leaving a small border around the edges. Evenly distribute the well-drained sauerkraut in a single layer. Next, lay the thinly sliced corned beef over the sauerkraut, followed by evenly spaced slices or shredded Swiss cheese. If desired, drizzle or spread mustard before adding the cheese for extra zing.
  3. Roll and Slice: Starting from one long edge, carefully roll the pastry into a tight log, keeping the layers intact. Gently press the seam to seal. Using a sharp knife, slice the log into 1-inch thick pinwheels, taking care to keep the swirls intact.
  4. Bake to Golden Perfection: Arrange the pinwheels on a parchment-lined baking sheet. Brush the tops with egg wash to create a shiny, golden crust. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes or until puffed up and golden brown.

Notes

  • Keep Puff Pastry Cold: Work quickly and keep the pastry chilled for maximum flakiness.
  • Drain Sauerkraut Well: Squeeze out excess moisture to prevent soggy pinwheels.
  • Layer Evenly: Spread ingredients evenly to ensure each pinwheel has balanced flavors.
  • Use a Sharp Knife: Slice gently with a sharp knife to avoid squashing the pinwheels.
  • Serve Warm: They taste best fresh from the oven but can be reheated to enjoy later.
