Ingredients

Scale

Carrots

  • 1 lb medium-sized fresh carrots
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Tahini Sauce

  • 1/4 cup tahini (sesame paste)
  • 2 tbsp freshly squeezed lemon juice
  • 1 clove garlic, minced
  • Pinch of salt
  • 24 tbsp warm water (to thin sauce)

Optional Garnishes

  • Fresh parsley, chopped
  • Extra black pepper
  • Smoked paprika
  • Toasted sesame seeds
  • Toasted pine nuts or chopped almonds
  • Pomegranate seeds

Instructions

  1. Prepare the Carrots: Preheat your oven to 425°F (220°C). Wash and peel the carrots, then cut them into evenly sized sticks or halves to ensure even roasting. Toss the carrots lightly in olive oil, season with salt and pepper, and arrange them in a single layer on a baking sheet.
  2. Roast the Carrots: Place the baking sheet in the oven and roast the carrots for 25-30 minutes, turning halfway through. Roast until the carrots are tender and have developed a caramelized exterior, taking care not to burn them.
  3. Make the Tahini Sauce: While the carrots roast, whisk together tahini, lemon juice, minced garlic, a pinch of salt, and warm water in a small bowl. Add the water gradually until the sauce reaches a smooth, creamy, and pourable consistency without being runny.
  4. Combine and Serve: Transfer the roasted carrots to a serving dish and drizzle generously with the tahini sauce. Garnish with freshly chopped parsley, extra black pepper, or a dusting of smoked paprika if desired. Optionally, sprinkle toasted nuts or seeds and pomegranate seeds for added texture and color.

Notes

  • Cut carrots evenly to ensure consistent cooking and texture.
  • Roast at high temperature to promote caramelization without making carrots mushy.
  • Add water gradually to the tahini sauce to achieve the right consistency.
  • Use fresh garlic for vibrant flavor; roasted garlic can be used for a milder taste.
  • Choose quality tahini for a smoother, less bitter sauce.
  • Store roasted carrots and tahini sauce separately to maintain texture and freshness.
  • Reheat carrots gently to preserve their firmness; avoid microwaving.
