Roasted Garlic Tomato Soup

Roasted Garlic Tomato Soup is a comforting and flavorful dish that combines the sweetness of slow-roasted garlic with the bright acidity of fresh tomatoes. Perfect for chilly days, this creamy, smooth soup is simple to make with fresh ingredients and offers both warmth and nourishment for body and soul.

Ingredients

Scale

Vegetables

  • 68 ripe fresh tomatoes (vine-ripened or Roma), roughly chopped
  • 1 whole garlic bulb
  • 1 medium onion, diced

Liquids & Oils

  • 23 tablespoons good-quality olive oil
  • 4 cups vegetable or chicken broth
  • Optional: 1/2 cup cream or coconut milk

Herbs & Seasonings

  • 2 tablespoons fresh basil or thyme
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Roast the Garlic: Preheat the oven to 400°F (200°C). Slice the tops off whole garlic bulbs, drizzle with olive oil, wrap them in foil, and roast for 30-40 minutes until the cloves are soft and golden brown. This process mellows the garlic’s sharpness and develops its sweetness.
  2. Prepare the Tomatoes and Onions: While the garlic roasts, roughly chop the fresh tomatoes and dice the onions. Roma or vine-ripened tomatoes work best for flavor and texture.
  3. Sauté Onions: Heat olive oil in a large pot over medium heat. Add the diced onions and cook gently until translucent and fragrant, forming a savory base for the soup.
  4. Combine and Simmer: Squeeze the roasted garlic cloves from their skins into the pot. Add chopped tomatoes, broth, and fresh herbs. Bring the mixture to a simmer and let it cook gently for 20-30 minutes to meld and develop flavors.
  5. Blend Until Smooth: Use an immersion blender directly in the pot or transfer the soup in batches to a blender. Puree until the soup is smooth, creamy, and velvety in texture.
  6. Adjust Seasoning and Finish: Return the blended soup to the pot. Season with salt and pepper to taste. Stir in cream or coconut milk if desired. Warm gently before serving to integrate the flavors and richness.

Notes

  • Roast garlic thoroughly to develop a sweet, mellow flavor.
  • Use fresh, ripe tomatoes for the best taste and color.
  • Simmer soup gently; avoid boiling to keep flavors balanced and prevent bitterness.
  • Blend soup in small batches for an even, smooth texture and to avoid splattering.
  • Balance acidity by adding a pinch of sugar if tomatoes are too tart.
