Instructions

  1. Prepare the potatoes: Wash and cut potatoes into evenly sized chunks to ensure even roasting. Pat dry thoroughly to help with crisping.
  2. Preheat the oven: Set oven to 400°F (200°C) for the perfect temperature to achieve crispy yet fluffy potatoes.
  3. Season the potatoes: Toss potato chunks with olive oil, salt, pepper, and chopped fresh herbs like rosemary or thyme until each piece is evenly coated.
  4. Add garlic and feta: Place the whole peeled garlic cloves and a block of feta cheese in a baking dish alongside the potatoes. Drizzle extra olive oil over everything to promote roasting.
  5. Roast: Roast for 35–40 minutes, turning the potatoes halfway through, until they are golden and crispy and the feta is soft and slightly caramelized.
