Instructions

  1. Cook the sausage: Heat a skillet over medium heat and crumble the ground sausage into the pan. Cook for about 6–8 minutes, stirring frequently until browned and cooked through. Drain excess fat and set the sausage aside.
  2. Prepare the eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. Pour into the same skillet over medium-low heat, stirring gently to scramble. Cook until soft and just set but still moist.
  3. Warm the tortillas: Briefly warm each tortilla on a dry skillet for 15 seconds per side to make them more pliable and easy to roll.
  4. Assemble the roll-ups: Lay each tortilla flat, then add a spoonful of cooked sausage, followed by scrambled eggs and a sprinkle of shredded cheese. Roll tightly from one end to the other, securing the filling inside.
