Ingredients

Scale

Vegetables and Aromatics

  • 3 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves or 1/2 tsp dried thyme

Proteins

  • 1 lb (450 g) pork sausage meat (or chicken/vegetarian sausage as preferred)

Pastry and Baking

  • 2 sheets puff pastry (use gluten-free puff pastry for gluten-free option)
  • 1 egg, beaten (for egg wash; use vegan substitute if needed)

Fats and Seasoning

  • 2 tbsp butter
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Caramelize the Onions: Thinly slice the yellow onions. Heat butter in a large skillet over medium-low heat and add a pinch of salt. Slowly cook the onions, stirring occasionally, until golden brown and caramelized, about 30 to 40 minutes. This slow cooking process unlocks their natural sweetness.
  2. Prepare the Sausage Filling: Add minced garlic and thyme to the caramelized onions and cook for one more minute until fragrant. Remove from heat. In a bowl, combine the onion mixture with the raw sausage meat, seasoning generously with salt and pepper. Mix thoroughly for even flavor distribution.
  3. Roll Out the Pastry: On a lightly floured surface, unfold the puff pastry sheets. Cut each sheet into rectangular pieces approximately 4 by 6 inches to form individual rolls.
  4. Assemble the Rolls: Spoon a generous amount of the sausage and onion filling along one edge of each pastry rectangle. Carefully roll the pastry over the filling, sealing the edges with a little water to prevent leaks during baking.
  5. Apply Egg Wash and Bake: Place the rolls on a baking tray lined with parchment paper. Brush each roll lightly with beaten egg to achieve a shiny, golden crust. Bake in a preheated oven at 400°F (200°C) for 20 to 25 minutes, or until the pastry is puffed and golden brown.

Notes

  • Take your time caramelizing onions to develop deep sweetness and avoid bitterness.
  • Chill the sausage filling slightly to make it easier to handle during assembly.
  • Avoid overfilling to prevent the rolls from bursting while baking.
  • Keep puff pastry cold and handle it quickly to maintain its flakiness.
  • Use fresh herbs like thyme or rosemary for more vibrant, elevated flavors.
