Savory Pistachio-Crusted Brie Bites

Savory Pistachio-Crusted Brie Bites are an elegant and easy-to-make appetizer combining creamy, melty brie cheese wrapped in flaky puff pastry or phyllo dough, coated with a crunchy, nutty pistachio and herb crust. A perfect blend of rich, savory, and slightly sweet flavors, these bites are ideal for casual gatherings, holiday spreads, or any occasion where you want to impress with minimal effort.

Ingredients

Scale

Cheese and Nuts

  • 8 oz Brie cheese, sliced into bite-sized pieces
  • 1 cup unsalted, shelled pistachios, finely chopped or crushed

Herbs and Seasoning

  • 2 tablespoons fresh herbs (thyme or rosemary), finely chopped
  • Salt and freshly ground black pepper, to taste

Sweetener

  • Honey or fig jam, for drizzling (about 2 tablespoons)

Pastry and Binding

  • 8 sheets of phyllo dough or puff pastry squares, enough to wrap each brie piece
  • 1 beaten egg (egg wash) for brushing

Instructions

  1. Prepare the pistachio crust: Finely chop or crush the shelled pistachios and mix them with the finely chopped fresh herbs, salt, and pepper to create a flavorful and crunchy coating.
  2. Cut and portion the brie: Slice the brie into small, uniform bite-sized pieces or cubes, ensuring even cooking and attractive presentation.
  3. Wrap the brie pieces: Lay out sheets of puff pastry or phyllo dough and place one brie piece in the center of each square. Brush the edges with beaten egg to seal, then press the pistachio herb mixture evenly onto the exposed brie or on the dough surface for a crunchy crust.
  4. Bake until golden: Transfer the wrapped bites onto a baking sheet and bake in a preheated oven at 375°F (190°C) for 12-15 minutes, or until the pastry is golden brown and the brie inside is melted and gooey.
  5. Drizzle with honey and serve: Allow the bites to cool slightly, then drizzle with honey or dab with fig jam before serving for a perfect sweet and savory finish.

Notes

  • Chill the brie before wrapping to prevent premature melting during baking.
  • Use fresh, unsalted pistachios for optimal crunch and flavor.
  • Handle phyllo or puff pastry gently to avoid tears; seal edges firmly with egg wash.
  • Keep an eye on baking time to avoid burning the pastry; ovens vary.
  • Serve warm for the best combination of melty cheese and crispy crust.
