Ingredients

Scale

Seafood

  • 12 oz fresh or frozen shrimp, peeled and deveined
  • 1 lb mussels, cleaned and debearded

Sauce

  • 2 cups crushed or diced canned tomatoes
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • 1/2 cup white wine
  • 1/4 tsp red chili flakes (optional)
  • Salt and pepper, to taste

Pasta

  • 8 oz spaghetti, linguine, or favorite long pasta

Finishing

  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare the seafood: Rinse mussels under cold water, discarding any that remain open when tapped. Peel and devein shrimp if necessary to ensure fresh, clean seafood that cooks evenly.
  2. Cook the aromatics: Heat olive oil in a large pan over medium heat. Add minced garlic and optional red chili flakes, sautéing until fragrant but not browned to build aromatic flavor for the sauce.
  3. Add the tomatoes and wine: Pour in crushed tomatoes and white wine, stirring to combine. Simmer gently to thicken the sauce and cook off the alcohol, enhancing the sauce’s depth.
  4. Cook the mussels: Add the mussels to the sauce, cover, and steam for about 5 minutes until all mussels open. Discard any unopened shells to avoid unpleasant bites.
  5. Cook the shrimp: Stir in shrimp and cook until pink and opaque, about 2-3 minutes, being careful not to overcook to keep them tender.
  6. Boil and drain the pasta: Meanwhile, cook pasta in salted boiling water until al dente. Drain, reserving some pasta water to loosen sauce if needed.
  7. Combine and finish with parsley: Toss the cooked pasta into the sauce, coating evenly. Stir in fresh parsley and adjust seasoning with salt and pepper before serving immediately.

Notes

  • Buy fresh seafood for best flavor and texture.
  • Do not overcrowd the pan; cook seafood in batches if needed to avoid steaming instead of sautéing.
  • Season gradually, tasting as you go for balanced flavor.
  • Reserve pasta water to loosen sauce if it becomes too thick.
  • Discard any mussels that remain unopened after cooking.
