Ingredients

Scale

Vegetables

  • 3 cups carrots, peeled and sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

Lentils

  • 1 cup red lentils, rinsed

Spices

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric

Liquids & Oils

  • 4 cups vegetable broth
  • 2 tablespoons olive oil

Seasoning

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Vegetables: Finely chop the onion and garlic. Peel and slice the carrots into small pieces to ensure even cooking and maximum flavor release.
  2. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking gently until they are soft and fragrant, which develops the flavor base for the soup.
  3. Add Spices: Sprinkle in the ground cumin, coriander, and turmeric, stirring constantly for about one minute until the spices become aromatic and release their rich flavors into the oil.
  4. Incorporate Carrots and Lentils: Add the sliced carrots and rinsed red lentils to the pot, stirring to coat them with the spiced oil for one to two minutes.
  5. Simmer Until Tender: Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low and simmer gently for 20-25 minutes, or until the lentils and carrots are tender.
  6. Blend for Creaminess: Using an immersion blender, puree the soup until creamy but still slightly textured for a pleasant mouthfeel. Alternatively, blend in batches using a countertop blender.
  7. Final Seasoning: Taste the soup and adjust seasoning with salt, pepper, or additional spices as needed. Serve warm.

Notes

  • Use fresh spices for stronger, brighter flavors.
  • Do not overcook lentils unless a very smooth texture is desired.
  • Sauté aromatics and spices before adding liquids to layer flavors effectively.
  • Adjust soup thickness by adding more broth for a thinner consistency or blending less for a chunkier texture.
  • Soup tastes better the next day after flavors have melded.
